Mushrooms in the woods



Everyday i try to eat as many home-cooked meals as i can. It kinda makes me happy knowing i'm eating healthy foods, and beyond excited when i make something that takes max 30 minutes to prepare. Having a lot of stuff on my "to do" list gives me no time to cook something that requires 2 hours to prepare. Plus, i feel like all the vitamins and good stuff disappear when cooking that long. So, as i do it with my fashion, i keep it simple. 
One pot dishes are my favorite. Basically throwing all those ingredients in one place and put it in the oven. 

My biggest obsession, when it comes to food, is with mushrooms and broccoli. All those awesome and delicious proteins, right?


Well, here is one really simple dish that you can prepare while dancing to your 5 favorite songs.


Ingredients:

  • Broccoli
  • Mushrooms
  • Ketchup
  • Vegan cheese
  • Olive oil (1-2 tbsp.)
  • Onion (if wanted)


Preparation:


First thing i always do is preheat my oven (180°C), and 90% of time while i'm waiting it to get to desired temperature i chop the veggies. Here all you have to chop really is mushrooms stalk, finely.
After that i mix it with the ketchup and put the mixture back in the mushrooms caps. 
Put it in the oven for 8-10 minutes and take it out to put the cheese above the mushrooms. 
Put it back in for another fiew minutes.
When you see that the cheese has melted take it out, and you are pretty much done.




I try to put balsamic vinegar and salt when it's done cooking. That way i can taste the difference, and put less then i usually do.


So, that was another way of showing you how to eat like a king without the fuss. If desired, cook some rice, potatoes or pasta. I'm guessing that would make it even better cause adding carbs is never a bad thing.
